A spike in blood glucose has no outward sign although many are familiar with how hyperactive children are after a sugary meal. What is also only recently known is that these (frequent) spikes can lead to the start of many health problems; like high BP, obesity, cancer, etc. However, as early as 1966, it was known that the liver produces glucose continuously even when no carbs were eaten. Sadly this piece of information was buried in favour of the food industry in promoting carbs as the main energy source.
In essence, Big Foods (through health agencies) have enticed us to eat carbs in quantity on top of the body's own production. Today most cannot give it up; the very definition of an addiction.
